Qidreh is the signature dish of Hebron, Palestine. The word "qidreh" means "pot" which is the vessel this dish is prepared in. The dish is normally prepared with lamb, but can also be prepared with chicken. This rice dish can also include chickpeas. The initial preparation may take place in one's home, from boiling the meat to spicing the rice, but it is then set in its special copper pot to the neighborhood wood-fired oven, where it is fully cooked.
